Once I've brewed my self a pot of green tea, what is the best way to store it? For how long? I want the maximum benefits from the antioxidants. There have been times when I've forgotten about it and left the pot out over night, is that bad?
Also, dose lemon or milk damage the antioxidants in green tea? Supposedly lactose damages the antioxidants in raw cocao (chocolate).
Also, is brewing too long bad too? I like strong tea, and I figure the longer it brews the more antioxidants. I like to brew the tea loose inside the kettle, I pour it through a strainer, and I leave the tea leaves inside to continue steeping until I've drank the entire pot. I drink a lot of green tea.
Any expert tea drinkers out there?

Thu, May 4, 2006 - 3:12 AMHmm, well I'm not sure about how milk damages antioxidants, but being a person who drinks tea for the taste mostly, I find it much much better to brew the tea with more leaves if you like stronger tea. Oversteeping tea withdraws the tannins in the tea which results in a bitter taste (and in my experience, why most people think they don't like green tea). If you like the "oversteeped" taste, then hey go for it. If you're drinking the tea mostly for the health benefits, it definitely won't hurt. However, nuance and subtelty of flavour will be lost.
Try searching wikipedia for tannin, catechins (the anti-oxidents found in tea), and anti-oxidants in general.

Wed, November 22, 2006 - 12:34 PMHi - if you're drinking tea for the health benefits - try white tea. It's got higher levels of anti-oxidants than green tea and less caffeine. I find it's ok to leave tea overnight but not with the tealeaves in. Brew your pot, take out the used leaves (you can often use them again later if they are high quality) and enjoy your tea over time. Good luck!

Tue, January 8, 2008 - 12:41 PMi have only had tea go bad after 4 or 5 days, i drink a lot of Pu,erh tea and i brew it with the tea loose in the pot and ad more water as needed to make more tea i get around 4 or 5 steeps per pot. i also drink a lot of green tea of all kinds i think i like roasted green tea the best.i think lemon is ok in your tea but i seem to remember someone telling me that milk lessons the antioxidents in the tea.
